Garlic Shrimp Pasta

Yields: 3 servings

Ingredients

6 oz. whole-wheat spaghetti

2 tbsp. olive oil, divided

1 bunch asparagus, trimmed and sliced

12 oz. shrimp, peeled and deveined

1 cup frozen peas

3 cloves garlic, chopped

1 red bell pepper, sliced

Salt and pepper to taste

2 cups non-fat yogurt

¼ cup parsley

3 tbsp. lemon juice

Instructions

Cook pasta according to package directions.

Strain and set aside.

In a pan, cook shrimp, bell pepper, asparagus and peas in half of the olive oil.

Cook for two to four minutes or until shrimp is tender. Set aside.

In a blender, grind garlic and salt.

Add yogurt, parsley, lemon juice, remaining olive oil and pepper into the blender.

Pulse some more.

Put pasta in a mixing bowl.

Add sauce and toss to coat.

Top with shrimp and vegetables before serving.
